Banana muffins

Delicious banana muffins inspired by my banana bread recipe

Ingredients
  

  • 130 gram Banana
  • 99 gram Egg white
  • 80 gram Applesauce Unsweetened
  • 62 gram Whey Protein Vanilla
  • 110 gram % Greek Yogurt
  • 90 gram All Purpose Flour
  • 1 teaspoon Cinnamon 1 tsp
  • 1 teaspoon Baking soda
  • 1 teaspoon Baking powder

Instructions
 

  • Preheat oven to 425 F. Place 11 muffin liners into a muffin pan.
  • Mash one banana until it has the consistency of chunky applesauce and mix it with all the wet ingredients.
  • Add all dry ingredients into a bowl, I like to sift them through a colander to make sure there are no lumps. Mix and make a hole in the middle.
  • Pour the wet ingredients into the hole and fold in the dry ingredients, do not overmix. It is better that there are some lumps in the batter than overmixing it.
  • Scoop batter into muffin liners, I use a tablespoon to make this easier. For each muffin liner, I use about 48 grams of the batter.
  • Bake in the preheated oven for 7-8 minutes. Turn the heat down to 375 and bake until finished, around 7-9 more minutes.
