Preheat oven to 425 F. Place 11 muffin liners into a muffin pan.
Mash one banana until it has the consistency of chunky applesauce and mix it with all the wet ingredients.
Add all dry ingredients into a bowl, I like to sift them through a colander to make sure there are no lumps. Mix and make a hole in the middle.
Pour the wet ingredients into the hole and fold in the dry ingredients, do not overmix. It is better that there are some lumps in the batter than overmixing it.
Scoop batter into muffin liners, I use a tablespoon to make this easier. For each muffin liner, I use about 48 grams of the batter.
Bake in the preheated oven for 7-8 minutes. Turn the heat down to 375 and bake until finished, around 7-9 more minutes.
