Baked Meatballs
Makes 22 big meatballs for only 11 calories each. Serve with zoodles, quick pasta sauce, a salad, or mashed potatoes
Ingredients
- 225 gram Ground beef – 96% lean 4% fat 225 gram
- 80 gram Eggplant
- 100 gram Mushrooms
- 40 gram Raw – Onion
- 0.25 tsp Xanthan Gum 1 gram (can be substituted with cornstarch)
- 0.5 tsp Salt 1 gram or to taste
- 0.5 tsp Black pepper
Instructions
- Preheat oven to 400 F.
- Dice the vegetables into small pieces.
- Cover a baking sheet with parchment paper.
- Combine spices, ground beef, Xanthan Gum, and vegetables, in a large bowl.
- Add water in increments of one tablespoon until the meat is slightly sticky.
- Shape meatballs with a spoon and place them on the baking sheet.
- Bake in the oven for 10-15 minutes or until done.
