Ingredients
- 450 gram Peeled Deveined Shrimp 450 g
Cajun Spice Mix
- 1 teaspoon Paprika spice
- 0.5 teaspoon Garlic spice
- 0.5 teaspoon Oregano dried
- 0.5 teaspoon Ground Cayenne Pepper
- 0.5 teaspoon Thyme dried
- 0.5 teaspoon Onion spice
- 0.5 teaspoon Salt
Vegetables
- 360 gram Bell pepper (Approx 2-3) Red, Yellow, Orange, and Green
- 120 gram Mushrooms
- 40 gram Scallion
Sauce
- 1 can Fire Roasted Diced Tomatoes 14.5-ounce / 411 gram
- 234 ml/gram Skim Milk
- 30 ml/gram Half & Half
- 4 gram Cornstarch
Instructions
Pasta or Rice (Optional)
- Bring a large pot of salted water to a boil. Prepare pasta or rice according to the package instructions for al dente.
Prep
- Thinly slice bell pepper, mushroom, and green onions.
Shrimp
- Lightly season the shrimp with salt and pepper.
- Heat a skillet over medium-high heat and add a small amount of cooking spray.
- Once the skillet is hot, add the seasoned shrimp in a single layer.
- Cook for 2-3 minutes on one side until they start to turn pink, then flip them over and cook for another 2-3 minutes, or until fully cooked through. Set aside
Sauce
- In the same skillet, spray with cooking spray. Add mushroom, and the bell pepper, sauté until softened, about 3-5 minutes.
- Add the green onions and sauté for about 2 minutes.
- Stir in the diced tomatoes and spices. Bring the mixture to a simmer and let it cook for about 10 minutes, allowing the flavors to meld together and the sauce to thicken slightly.
- In a small bowl, whisk the milk, half and half, and cornstarch until the cornstarch is fully dissolved. Pour the mixture into the skillet or pot with the tomato sauce, lower the heat, and stir continuously. Allow the sauce to simmer for an additional 5 minutes, or until it has thickened slightly.
- Add the shrimp and pasta back to the skillet and gently mix everything.
Serve
- Sprinkle chopped fresh parsley, cilantro, or more green onions over the Cajun Shrimp.
