The Cheap and Healthy Bagel

Ingredients
- 120 gram All-Purpose Baking Flour
- 75 ml/gram Skim Milk
- 66 gram Egg white
- 10 gram Oat Fiber
- 30 gram Unsweetened Applesauce
- 1 tsp Baking powder
- 0.5 tsp Baking soda
- 0.5 tsp Xanthan Gum
Instructions
- Preheat oven to 375 F.
- Line a baking tray with parchment paper
- Add all wet ingredients except the egg whites into a bowl and mix until combined.
- Add and combine all dry in another bowl.
- Add egg whites and xanthan gum to a large bowl. Using a hand mixer or stand mixer, beat the egg whites on high speed until stiff peaks form. This will take a few minutes. You can tell it is done when you can turn the bowl upside down without the batter spilling.
- Make a hole in the middle of the egg whites and pour in the wet and dry ingredients.
- Fold in the dry ingredients, do not over mix. It is better that there are some lumps in the batter than over mixing it.
- Let sit for 3 minutes
- In a small bowl, add some water.
- Dip your hands into the bowl of water, and grab 1/6th of the dough. Place it on the parchment paper. It will be sticky!
- Shape into a bagel by creating a hole in the middle and stretch the dough around. After it has the right shape, dip your fingers in water and smooth over to create a smooth surface. This will help any bagel seasoning stick on.
- Top with your favorite bagel seasoning.
- Bake in the preheated oven for 15-20 minutes.
