3 Ingredient Protein Cookies
Five different way of making these protein cookies. Mine usually yield 12 cookies. The entire batter is 135 calories .
Ingredients
- 31 gram Whey Protein I use Optimum Nutrition – Vanilla
- 50 gram Simple Truth Organic – Applesauce Unsweetened
- 0.5 tsp Baking powder
- 40 gram/ml water
Instructions
- Preheat oven to 350 F. Line a baking tray with parchment paper or use a silicone baking mat.
- Combine ingredients, make sure to use fresh baking powder.
- Spread each cookie out on the baking tray using a full teaspoon of batter for each.
- Bake in oven 8-10 minutes.
- Let cool before eating for a crispier cookie. I used Optimum Nutrition Vanilla Whey in my cookies but other protein powders will also work. If you use an unflavored protein powder, add a teaspoon of vanilla extract and sweeten it to taste.
Variation of this recipe using egg whites and whole egg:
Replace apple sauce with egg white
- The batter is sticky and hard to spread on the cookie tray. Made drier, rubber texture cookies.
- Nutritional breakdown: 137 calories, 28-gram protein, 1-gram fat, 3-gram carbs.
Apple sauce (20 gram) and egg white
- This created a bread consistency, it was moist and reminded me of a sponge cake. Makes a bigger serving of batter that yields about 15 cookies.
- Nutritional breakdown: 147 calories, 28-gram protein, 1-gram fat, 5-gram carbs. Picture 4.
Replace applesauce with a whole large egg
- The batter is sticky. However, the thinner cookies were completely crunchy. Thicker ones were crunchier than other recipes. Probably my favorite flavor and texture wise. Created 16 cookies.
- Nutritional breakdown: 192 calories, 30-gram protein, 6-gram fat, 3-gram carbs. Picture 3.
Apple sauce (10 gram) and whole large egg
- These were the moistest cookies and with a mild sweet flavor. Makes a lot more cookies than the other recipes, about 19 of them.
