Lemon Mousse, Protein Edition
My all-time favorite mousse.
Ingredients
- 4 g gram Gelatin Unflavored 10 calories
- 140 gram Greek yogurt, Total 0% 74 calories
- 15 gram/ml Lemon Juice (1 tablespoon) 2 calories
- 0.5 teaspoon Lemons, peel only 1 1 calories
- 4 teaspoon equivalent to sugar substitute like splenda
Instructions
- Bloom your gelatin in a little cold water, about one-two tablespoons. In a separate bowl heat enough water to mix the gelatin in. I do 2-3 tablespoons of water and microwave it for 40-50 seconds. Whisk gelatin and water until dissolved, let it cool until it reaches room temperature.
- Zest lemon. Add greek yogurt, sugar substitute to taste, lemon juice, lemon zest, and gelatin into a mixing bowl. Mix well with an electric mixer, for about 2-4 minutes. You want to whip as much air as possible into the mousse.
- Pour into a 2-cup sized container and let cool in the fridge for 1-2 hours.
Notes
Use fresh lemon juice! Stays well in the fridge for up to 36 hours.
Blooming helps completely dissolve the gelatin.
