Lean Fish for Fish & Chips
No breadcrumbs or flour needed in this recipe. A skinny version of your regular fish & chips but still tasty. I'd recommend using cod or haddock.
Ingredients
- 225 gram Cod
Batter
- 1 small whole Egg
- 1 teaspoon Lemon peel
- 0.5 teaspoon Salt
- 0.5 teaspoon Black pepper
- 0.5 teaspoon Parsley
- 0.5 teaspoon Marjoram
Instructions
- Separate egg yolk and the egg white in a glass bowl.
- Mix spices, and lemon peel with the egg yolk to form a paste. Whip egg white by itself with an electric mixer until white peaks form, about 5 minutes.
- Carefully fold the egg yolk paste into the egg white. Dip each cod fillet in the egg mixture.
Pan
- Heat a skillet over medium-high heat. Spray lightly with non-stick spray and cook five minutes on each side or until fish flakes easily when tested with a fork.
OR
Oven
- Place cod with the side the skin was on down on an oven-safe dish. Bake in a preheated oven at 400 F for 15-20 minutes or until fish flakes easily when tested with a fork.
Notes
Do not count the entire batter in your calorie content, only count half towards the total nutrition. It makes about 46-gram batter, and only 22 grams coats the fillets.
