Stuffed Bell Peppers

Customize this recipe by adding mushrooms and rice or cauliflower rice to the ground beef mix. For a quicker dinner, substitute the spices for taco spice.

Ingredients
  

  • 113 gram Ground Beef93% Lean 7% Fat
  • 240 gram Green bell pepper
  • 1 Tbs Parsley, Fresh
  • 30 gram Onion
  • 1 clove Garlic
  • 0.5 teaspoon Basil, dried
  • 0.5 teaspoon Italian Seasoning
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Ground Cumin
  • 0.25 teaspoon Salt
  • 60 gram Tomato Sauce
  • 28 gram Velveeta Shredded Cheese

Instructions
 

  • Preheat oven to 350 degrees F.
  • Slice the bell peppers in half and discard the seeds.
  • Wash and mince the fresh herbs.
  • In a non-stick skillet, cook the ground beef, onion, and garlic until beef is no longer pink and onion is translucent. 
  • Stir in spices, tomato sauce, and water. Bring to a boil then reduce heat and let the mixture simmer for about 10-15 minutes. 
  • Spoon the meat mixture evenly into the peppers. Place them upright in a baking pan just big enough to hold them all upright and sprinkle with cheese. 
  • Bake for 25-30 minutes and serve while still hot.
