Stuffed Bell Peppers
Customize this recipe by adding mushrooms and rice or cauliflower rice to the ground beef mix. For a quicker dinner, substitute the spices for taco spice.
Ingredients
- 113 gram Ground Beef93% Lean 7% Fat
- 240 gram Green bell pepper
- 1 Tbs Parsley, Fresh
- 30 gram Onion
- 1 clove Garlic
- 0.5 teaspoon Basil, dried
- 0.5 teaspoon Italian Seasoning
- 0.5 teaspoon Black pepper
- 0.5 teaspoon Ground Cumin
- 0.25 teaspoon Salt
- 60 gram Tomato Sauce
- 28 gram Velveeta Shredded Cheese
Instructions
- Preheat oven to 350 degrees F.
- Slice the bell peppers in half and discard the seeds.
- Wash and mince the fresh herbs.
- In a non-stick skillet, cook the ground beef, onion, and garlic until beef is no longer pink and onion is translucent.
- Stir in spices, tomato sauce, and water. Bring to a boil then reduce heat and let the mixture simmer for about 10-15 minutes.
- Spoon the meat mixture evenly into the peppers. Place them upright in a baking pan just big enough to hold them all upright and sprinkle with cheese.
- Bake for 25-30 minutes and serve while still hot.
