Taco Spaghetti Squash
Quick and tasty dinner that ensures that you get enough vegetables
Ingredients
- 380 gram spaghetti squash 103 calories
- 160 gram ground beef, 96/4 184 calories
- 9 gram taco seasoning mix 27 calories

- Brown the ground beef in a skillet.
- Add water according to the taco mix package and two servings of the spice mix. If you use McCormick Taco Seasoning add 120 ml (0.5 cups) water and 9 gram (4 tsp) spice mix. Let simmer for 3-5 minutes.
- Add the two servings of the spaghetti squash to the skillet and stir to combine with the ground beef.
- Serve topped with your favorite taco toppings. I use finely chopped romaine lettuce, bell peppers, cilantro, jalapeno, and chopped green onions. Other ideas are Mexican shredded cheese, pico de gallo or salsa, avocado, lime, sour cream, or Greek yogurt.
