Zucchini Taco Boats
Low-carb take on Taco tuesday with plenty of fiber and protein. Each serving consists of two boats and is only 140 calories. Provides 14 grams of protein!
Ingredients
- 227 gram ground beef I use trader joes 93/7
- 4 zucchini
- 205 gram diced tomato (half the can)
- 60 gram onion
- 14 gram jalapeño
- 85 gram riced cauliflower
- 28 gram shredded cheese I use Velveeta
- 10 gram fresh cilantro
Spice Mix
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp oregano
- 0.5 tsp salt
- 0.5 tsp black pepper
Instructions
- Preheat oven to 400 F
- Cut the zucchini in half and scoop out the flesh.
- Dice the onion, zucchini flesh, jalapeño, cilantro, and mince the garlic
- Heat a non-stick skillet over medium-high heat. Add the ground beef and brown.
- Halfway into the cooking time, add onions,
- Add the diced tomato, garlic, spice mix, cauliflower rice, and a couple of tablespoons of water.
- Let simmer for 5 minutes.
- Place zucchini cut side up on a parchment-covered baking tray. Add the filling in the zucchini, cover with foil.
- Bake in the oven for 20 minutes.
- Remove foil, top with cheese, and bake for another 5 minutes.
- Serve topped with fresh cilantro and lime.
Notes
For a quick dinner, substitute the spice mix with a pre-made taco spice mix.
