Chicken Chili
Chili with a twist – high protein and low calorie

Ingredients
- 454 gram chicken Breast
- 110 gram onion Yellow or White. About 1 medium sized.
- 2 cloves garlic
- 14 gram jalapeño Equals one pepper
- 10 oz (1 can) diced tomatoes and chopped green chilies I use Rotel
- 708 gram water with 12-gram Granulated Chicken Bouillon or 708-gram Chicken Stock Equals 3 cups Chicken Stock
Spice Mix
- 0.5 tsp salt
- 2 tsp ground Cumin
- 1 tsp dried Oregano
- 0.5 tsp ground Cayenne
End of cook time
- 20 gram cilantro About 9 springs
- 30 ml lime Juice Approx. 1 lime
- 1 can cannellini beans or white kidney beans Drained and Rinsed
Instructions
- Chop onion, jalapeño, and mince garlic.
- Add the main ingredients and the spice mix to a slow cooker.
- Cover and let cook on low until the chicken is done, about 4-6 hours.
- Towards the last 30 minutes, add the beans.
- Chop the cilantro.
- Before serving, shred the chicken breast.
- Then stir in the lime juice and cilantro.
- Serve topped with sliced scallion, cubed avocado, sour cream, radishes, cheese, or jalapeño slices (pickled).
Notes
For a more complex flavor, sauté the onions, garlic, and jalapeño before adding them to the slow cooker:
- Add butter to a pan over medium heat.
- Add onions, and cook for 8 minutes.
- Add the jalapeño and garlic, and cook for 1 minute.
- Add the spice mix, and cook for 1 minute.
- Transfer everything into the slow cooker along with the rest of the main ingredients.
- Follow the main recipe.
